Chicken Burgers

INGREDIENTS

  • 1and1/2 lb. ground chicken
  • 1 teaspoon smoked paprika
  • 1 clove garlic, minced
  • 3 scallions, minced
  • Kosher salt
  • Freshly ground black pepper
  • 3 teaspoon extra-virgin olive oil
  • 4 slices cheddar
  • 5 leaves butterhead lettuce
  • 2 cup coleslaw 
  • 1 avocado, thinly sliced
  • 1/4 small red onion, thinly sliced
  • 1 jalapeño, thinly sliced
  • 4 burger buns, split and lightly toasted

DIRECTIONS

  • Combine the chicken, paprika, garlic, and green onions in a large bowl. Add salt and pepper to taste. Make 4 patties out of the mixture.
  • Heat oil in a big skillet over medium heat. Add the burger patties and cook, flipping once, for 8 to 10 minutes, or until browned and a thermometer inserted in the center reads 165°. Add the cheddar on top, cover the pan, and simmer for 2 minutes, or until the cheese has barely melted. Take burgers off the heat and place them on a dish.
  • On top of the bottom buns, pile lettuce, coleslaw, chicken burgers, avocado, red onion, jalapenos, and additional coleslaw. sandwich tops to close with.
